The Role of the Irish in American Food History

I recently finished a wonderful book, 97 Orchard by Jane Ziegleman, about immigration to American and our food history. the relevant quote:

 No other immigrant arrived in the United States with a culinary tradition as skeletal as the Irish.

I’m glad my ancestors left.
